Or at least would only eat in a famine... Or would pass up at the table
For me that is a fairly short list: okra, baked beans, mayonnaise, grapefruit, kimchi, liver, liverwurst, certain canned (or frozen) vegetables that I will eat fresh, pickles, tuna, chocolate cereal, chocolate ice cream, hot chocolate, and coffee.
I like lamb when I prepare it. I also will not eat most things with mustard or ketchup on them. It's not that I don't like them, I just like them on certain things.
I would probably try organ meats or other offal but I'd really have to be in a situation where I could spit them out and they would have to be well-prepared.
If it is not on the list I'd probably try it, or I would eat it.

Among other things, I don't like eating deer heart. It's a completely irrational dislike, considering it's just muscle like any other piece of meat is. There's nothing about the taste or texture that I dislike, just the thought of eating the heart disturbs me for some reason. I was raised on store-bought, mostly processed food, and never knowingly ate heart growing up (my diet is the exact opposite now thanks to my wife). Combined with my diet growing up, "Indian Jones and the Temple of Doom" pretty much ruined any chance I had of being able to eat deer heart with an undisturbed mind.

The only thing I can think of that I wouldn't eat except for in famine was organ meats. It's too bad, too. Organ meats are packed with good nutrition. There are few things that I would eat when served while visiting someone's house as to not be rude, but you won't find me eating at my house: lamb, anything seasoned with caraway, plain milk (I drink it frequently, but has to be blended with something), plain beans, fish with skin still on it. I'm not picky. There are a few other dishes running through my mind, but those are very out of the ordinary so not worth mentioning. But to give you an idea of what I'm thinking.... blood pudding.

I will try just about anything once but I would say I can be fairly picky. Now if I was in a situation of eat it or die...I'd eat.
Food I won't eat ...hot dogs, brats, chorizo, and anything like this. Bologna. Ham. Bacon. Refried beans. Shrimp. Veal. Lamb. Chicken that is still on the bone (will eat chicken breast). Turkey. Any other bird. Eggs. Octopus and squid. Radishes and beets. Clams and anything in this category of "food". Cream of Wheat. Tapioca pudding. Caviar. Bleu cheese.
I'm sure there is more. I basically struggle with meats and things with gross textures.
Eta...any and all organ meats.
Eta...mushrooms unless they are breaded and fried morels
Eta...fish...unless breaded and fried and/or covered in hot sauce
Eta...ribs. This is just one of those things my family loves but grosses me out. I cook it. Serve it. Leave the room while they eat it.
PS...I will eat all of the above if I am invited to dinner and that is what the host serves. My need to be polite and kind trumps my pickiness. Only my husband, children and mother truly know the depths of my food issues. lol My mom will say "Want to come for supper? I'm making *fill in blank*. Will you eat it?" Me - "Of course!" Mom- "Will you be silently gagging?" Me - "Umm." Mom - "Ok. I'll make something else." haha!

I can't think of anything that I won't eat. You're someone I'd like to cook for! You are someone I would like to eat for. There are things that I would not make at home (like veal) but would eat as a guest.

Just to be fair, veal from a small farmer purchased from a butcher is not the same as getting any meat from a grocery store. Some veal calves are treated better than a factory farm animal any day. Most of the conditions for factory-farmed meat are pretty bad, most of the meat we eat sits in its own filth. Small scale veal isn't what most people think. Many farmers are working to show that they do not engage in the same questionable practices as corporate, large-scale veal producers.
