Sometimes I have trouble coming up with ideas of what to make for meatless days. So, I thought that maybe we could start a thread here and everyone could share ideas. I made blueberry pancakes yesterday for lunch. (Funny thing... I was looking at the wrong recipe and my mistake added a cup of honey instead of 6 tbsp. of sugar, and they tastes amazing! Some of the greatest inventions are made by mistake! )

We had mexican seafood. Flounder over a bed of mexican brown rice, seared peppers & onions, and guacamole. That's a frequent Friday meal for us.
We eat soup frequently on Fridays. We eat mainly tomatoe soup and butternut soup because I make them from garden produce and freeze it in quarts.

A lot of times for lunch/dinner with the children I make bannocks and fried potatoes with a veggie on the side. Now go look up "bannocks." Black bean burgers are yummy, too.

Here is what I like to eat on a meatless day, not necessarily what I actually eat all the time:
Risotto, especially mushroom risotto. I introduced my both of my parents to it, and every time they visit, they request it. Dad said he wants to spend the rest of his life eating it because he never knew it existed.
Seven Layer dip. Yes, I know this isn't a hot meal or maybe even a real meal but if no one wants to do any real cooking, it makes a nice lunch, snack, and I won't judge anyone who eats it for dinner, unlike people who eat spaghetti Os. I do judge them.
German Pancakes. Have eggs to be used up? This is THE thing to make.
Margherita pizza.
Thai Shrimp Curry. I could not find the recipe for this and I realized I combined two recipes, so now it only exists in my head.
Fettucini Alfreddo. Easy to make sauce, and you can add anything left over veggies, roasted veggies, etc. One time I made a roasted poblano sauce and served it with cumin shrimp. That was probably my favorite.
Grilled vegetables. You can do kabobs style and serve with a large (also grilled) portobello with a little cheese melted on top, with a side of rice, pasta, or even a salad.
"Lasagna" with zucchini, summer squash, eggplant, or all three instead of noodles. I also make a spinach and butternut squash version in the fall.
If you own a mandoline slicer, ratatouille is awesome. We love it. I have no clue why it taste as good as it does but it is just wonderful.
Spanakopita, which is a favorite around here.
Roasted tomato and basil soup, potato and leek soup, minestrone, broccoli cheddar soup, Tuscan vegetable soup, and a sort of soup: pasta è f.a.g.i.o.l.i. Thanks word filter but that means "beans" in Italian not anything else.
Ok, I will stop. I must. Stop. Now.

Some of my meals match the others, but I'll go ahead and play for fun, anyway ALL of my kids like egg salad, which is a huge win. So, we will do that often, along with tuna salad, or sardines and crackers (my husband and a few kids like those....me, not as much). veggie pizza (if you don't have a baking steel for pizza, I highly recommend it...awesome kitchen tool!); Tomato basil soup; tomato basil pasta; warm or cold pasta salad (I have two versions); boiled potatoes and dip; BBQ shrimp with a loaf of french bread (it's not actually BBQ, so I don't know why it's called that, but it's delicious); beans and rice; bean tosadas/tacos/burritos/enchiladas/quesadillas; seafood gumbo; fish or shrimp tacos; shrimp creole (we actually try to keep seafood dishes to a minimum, because we like it so much, it's more of a treat than a sacrifice....so, we save that for special-to-us feast days that happen to also be abstinence days); broccoli, potato, cheese soup in bread bowls; vegetable soup or stew; veggie stir fry or fried rice; plain pasta with butter, Parmesan, and olives; salad with tons of fresh vegetables and boiled eggs; omelets; scrambled eggs and toast; egg burritos; grilled cheese with or without tomatoes, on bread or tortillas.

I'm loving these ideas. Thanks for your lists, everyone! Friday's are kind of difficult because my husband is a picky eater. He doesn't like many things creamy (ranch, mayo, cream cheese, sour cream, etc), and he doesn't care for beans, and he hates tuna, and eggs are really hit and miss.
I really like the bread bowl idea, I had never thought of making them myself, but he would really like that.
I do the butternut squash lasagna too, Clotilde. It's one of my favorites! I put layers of spinach in it as well. The vegetarian lasagna is also great. I haven't made that in some time. The season is coming around where we'll be overflowing with squash so I'll have to remember to make it!
Some things I have never heard of up until now: Spanapokita and German pancakes. After I hit reply I'm headed to allrecipes.com to investigate.

Marya, I have used various recipes, but here is one that I think I've used and liked before: allrecipes.com/recipe/25210/italian-bread-bowls/. I usually just google 'homemade bread bowls', and pick whichever one looks good to me that day . I also make them a bit smaller than called for, so the kids aren't overwhelmed by them. And, whatever we end up not eating, I use for either homemade bread crumbs or croutons. It's a lot of bread in one sitting, so most of us just eat the top and inside that gets pulled out to make the bowl. If I have time, I'll cut the tops, hollow them out, then make croutons on the side to go with the meal; otherwise, we just eat it as is. I have also seen pretzel bread dough bowls....those sound pretty good, but I have yet to try them.

I haven't tried these yet, maybe this Friday, but they look delicious. I would probably add a TB or 2 of coconut oil and use a fresh egg. black bean and quinoa burgers
p.s. this gal does a lot with food storage type of items but it's easy to sub with fresh instead.

If you have a Trader Joe's where you live try their "21 Season Salute", it is delicious! Burgers, chicken, chops, meatloaf, tuna salad. I will use it in the black bean/quinoa recipe.
