Ooo, excellent idea! I have an IP. I will be trying this out. So, please forgive my ignorance, ladies... But... What is an IP? The veggie stock sounds amazing! Let us know how it goes! :-) Oh, and an amazing addition to veggie soups is celery seed if you are looking for a little extra flavor! I would have added celery but it spoiled and I had already been to the store.

I'm making vegetable stock in my IP for the first time. I used to sautée function to sautee a sliced leek, four roughly chopped carrots, three cloves of unpeeled garlic, a large chopped onion, some mushroom stems,and pepper in olive oil. I added two cans of diced tomatoes and a small quartered potato with skin. I set it for 30minutes manual, high pressure, and will do a quick release after 2 minutes. I will strain, season, and cook the other vegetables that I have prepped for the soup. Ooo, excellent idea! I have an IP. I will be trying this out. The only thing I left out was some extra water. About 4 cans. Later when cooking the potatoes and green beans in the broth for the actual soup, I also slipped in a Parmesan rind. It just needed some salt and it was the best I've ever had. I'm going to save some serious cash over buying boxed vegetable stock, let me tell you.

They are really wonderful if you want to cook something that takes all day in a crockpot but the amount of flavor in the stocks I've made is just amazing. I purchased mine two years ago, and was intimidated so I didn't use it for a years. Now I make cheesecake and all kinds of other stuff, usually soups and things that need braising. I just made mashed potatoes for the first time last week, it was so easy that I went upstairs and watched a movie because I didn't have to watch the pot. I now have two Instapots, and many nights I use them both at the same time, one for rice and one for barbacoa, for example.

Did you notice that during lent more cooking and food threads start....hmmmmm I have to restrain myself from posting food threads all year and the fast makes us hungry! I suspect that I'm not the only one trying to make everything work for all their family members during the fast. It's tricky for me because I have to avoid migraines if I'm driving a lot on a given day, sometimes my husband works overtime, and the kids' activities require varying amounts to energy (my son was in a fencing tournament last night, he was "starved" when it was over.)

Adding a Parmesan rind, balsamic vinegar, and sometimes extra tomato products really help. However, what came out of the IP last night was leaps and bounds better than anything on the shelf. I have never had results so good from the stovetop either.

Wow! Never heard of these before! I know of crock-pots and the normal pressure cookers, but that is all. I will have to look it up some day.

I have been reading about the tradition of Visiting Day. This occurs on Easter Monday where Catholics would visit the elderly and sick, or make any other social/works of mercy type visits. I believe there are a few sources that mention it, but I'd like to get more background information. It sounds like this wouldn also be the time where Catholics did anything they were unable to do, due to the fast, like bring soup to the sick or take a meal to a widow. I know that it puts a strain on socializing and generally Catholics avoid such during Lent, if they can. I am betting that this is how the tradition came about. I thought I saw one source say that it was also a day of general visiting but will have to double check.
