Wow that does have a great variety! I'll print it off and stick it in my recipe notebook to try sometime this summer. Thankyou! Lol. Leaving the zucchini at the door steep is a great idea. Then they can't refuse it.

I'm going to try making my own ketchup this year. This is one of my all time favorite ways to use tomatoes! Be prepared to use A LOT of tomatoes for a little bit of product. It's so worth it though. We became snobs to store bought ketchup after making homemade. Do you make your own tomato paste for the ketchup? My recipe calls for it, but haven't decided if I'm going to try to make my own paste. I may cheat and use store bought for that part.

I may cheat and use store bought for that part. I just boil it down until it's really thick instead of using tomato paste. Once the recipe is finished except for thickening, instead of boiling it in a large pot I break it up into several smaller batches and boil it in a large skillet. It's quicker that way. Takes 2 hours instead of 2 days! Though the whole process takes me the better part of a day.

Also, in order to save time, I neither skin the tomatoes or remove the seeds. The skins add more bulk to the recipe, and you can't even tell that they're in there after pureeing it.

I made this recipe yesterday for the main dish, since it was Friday.Neither of us are crazy about summer squash, but we grow it because it's easy and prolific. Cheap healthy food is hard to pass up! This recipe wasn't all that healthy though. My husbands comments on it were "I wouldn't call it penitential, but it's definitely no Sunday meal." Lol. It was just alright, but I am posting it because it is an excellent way to get rid of squash, fast, if you have an over abundance. 2 lbs for an 8x8 dish! faq.gardenweb.com/discussions/2766092/annies-salsa-recipeIt's good. I leave out the sugar because I don't like the taste of it in salsa. I roast tomatoes until most of the moisture is gone and then blend it instead of buying paste and sauce. I think canned tomatoes take away from the overall taste.
