Living in Eastern NC, I have to agree that barbecue slathered in vinegar is preferable to ham on any occasion.

Pork roast is way better than ham. Growing up, we ate it almost every Easter, then we had gnocchis with the leftover potatoes the next day. We're having leftover pork roast today. what did you serve with your gnocchis? A sauce made from pork, probably the fattier end of the pork loin roast, if you've seen a big one you know what I'm talking about. We always made sauce with pork, that was the spaghetti sauce I grew up with.

Ham is definitely not one of my meals, but my family members like it and so we have ham every Easter... So, I just try to smile and offer it up...

Anyone ever try country ham? I accidentally bit into it once without knowing and was unpleasantly surprised. They took a boring ham and made it worse by soaking it in salt.

I stayed home with the new baby. I had cereal, toast, leftover spaghetti noodles, ice cream, two pieces of dessert someone had left me and some candy. Then when hubby got home at 930 i had two ham sandwiches and some veggie layer salad. Happy Easter everyone:) My heartfelt congrats to you, Marya! How are you holding up? Thank you. I'm recovering, to put it nicely. Baby is doing fabulous. My husband is home for a while so he's been heping a lot with the meals. And you?

I like a good juicy ham. I wouldn't want to eat it everyday, though. Turkey is so dry. Besides, it's tradition in our family. If we took it away we'd never hear the end of it.

Reminds me of a story...there once was a family who was fairly poor...there were 5 children and a workman husband...the Mother was a good and frugal cook....thechildren would always remember how mom had the best roasts and hams...they took note of the fact that moms roasts had always had both sides or end cut off....thinking this the secret of her succulent roasts all the children adopted the practice...but with sporadic and dissappointing results. Later after many years when father had passed and mother was in her very old age....at Easter the Children got together and made dinner for mother. Bringing out a ham with both ends cut off to the table the children asked their mother finally to reveal the secret...because even the ham they served that Easter was dry and flavorless..."Mother ..."they said"see we cut off the ends of the ham and its still dry...!" The mother Piped up and said"well my dears I would marinate my roasts for days"...the children asked" is that why you cut off the ends?...to better marinate?" Mother laughed and said" Oh no! I cut off the ends after marinating because we couldnt afford a large roasting pan!😄

I made a neat recipe last night with leftover ham from Easter (Mom cooked up two of them). I mixed the ham with diced potatoes, onions, peppers, and tomatoes. Now, THAT was REALLY good! Adding a little cheese on top is fun! Oh, and my mom's favorite ham recipe is scalloped potatoes and ham, which is potatoes, onions, ham and a homemade cheese sauce. This is also really yummy...

Did you saute or bake? I make scalloped potatoes and ham every few months. I also like ham and lentil soup. I have done it bakes and sauted. Ham soup is also nice! My mom made some with Great Northern Beans.
