I do like cooking with white rice more than brown, but brown is all I have. Going to try this soon. Brown is what I had on hand as well, so that's what I used. It just took longer to cook. I was also short on milk, so instead of milk I used more chicken stock. I didn't have parmesan either, so I just used the Italian blend I had on hand.

Last year I wondered what chili would be like with chicken stock in it, so I tried it. I went from being so-so towards chili, to craving it all winter. It makes it so rich and tasty!

Diced onion, ground beef - brown both of those. I "drain" the ground beef (just put it on a plate lined with paper towels to get rid of some of the grease.) In a big stock pot -Ground beef/onion mixture, crushed tomatoes, beans (pinto, great northern, and black beans), and I add a bit of tomato paste to thicken things up. I season the ground beef with salt, pepper, and garlic. I also use the store brand packets of chili seasoning. No kidney beans in chili....how LIBERATING!! Thanks:) Kidney beans are terrible.

I taught a cooking class today on herbs and spices. We made garlic knots, pesto, marinara, spice cake, and herbed zucchini with drumsticks.

Unless someone gives me a bunch of zucchini, which is entirely possible, I don't have a huge mound of it to use up this year. I have 4 of them that I'm going to grind up and freeze for bread- then I will be zucchini free!

That's a good idea. I haven't done that in awhile. I love this thread! It's giving me lots of ideas. I have a lot of chicken to use up, but after that the first thing I'm making is Chili!

I love kidney beans and I don't care who knows it. But they are second to black beans. Black beans are my favorite in chili.

Last night we had fried rice and then some pork strips marinated in br. sugar and soy sauce mix. Very simple but the family liked it.
