I must admit I am not much of a cook. This recipe is simple, quick and easy. I cook it on Fridays as it is meatless.
1 cup vegetable broth 1 can diced tomatoes (do not drain tomatoes) 1/2 pkg spaghetti olive oil salt, pepper or seasoning of choice grated Romano or Parmesan Cheese
Combine broth, diced tomatoes and spaghetti in large pot. Drizzle olive oil and seasoning on top of spaghetti and cook uncovered, stirring occasionally, approx 10-12 mins until spaghetti is done. Sprinkle with cheese and serve.

Salisbury Steak
1 lb hamburger 1/3 c. bread crumbs or oatmeal 1/2 c. diced onion 1 egg 1 tsp salt 1/4 tsp pepper 2 c. beef stock or broth 1 large onion, sliced mushrooms, sliced 3 Tbsp cornstarch 3 Tbsp water
combine the first 6 ingredients and shape into patties. Cook them in a skillet until browned on both sides. Add the onions, mushrooms and stock to the skillet and simmer until the onions are tender. In the meantime, mix together the water and cornstarch. Once the onions are tender, remove the patties from the skillet. While stock is boiling, add the cornstarch mixture to it and stir quickly to make the gravy. Once the gravy thickens, return the patties to the pan and serve over rice or egg noodles.
This is one of my husbands favorites. Its still good if you leave out the mushrooms or add peppers.

I made a sausage and Lima bean stew this week that was excellent. It's from a crockpot cookbook I found at my library, but I modified it. It called for a lot of precooking on the stove, which, in my opinion, completely misses the point of the crockpot. I use it so I don't have to cook on the stove....dump stuff in, turn it on, ready at dinner time. Anyway.....this is what I did.
2 lbs. dried Lima beans (you can soak overnight, but I didn't. I just had to add extra water halfway through) 1 lb. sausage, sliced (smoked, fresh, Cajun, italian, ....whatever you like) 1 large, chopped, yellow onion 1 chopped green bell pepper 4-5 cloves diced garlic Cajun seasoning to taste Enough water or stock to cover everything (I used chicken stock and water) Optional: 4 or five cubed potatoes; fresh corn off the cob (2 ears); frozen or canned would work, too. my husband had brought some leftover corn and potatoes from a crawfish boil he had at work, so I used those and the flavor it gave to the dish was excellent. But, raw corn and potatoes work just fine.
We served it over jasmine rice, but it was delicious just as is.
Toss everything in and cook on high for 4 or 5 hours; or low for 8 hours. I found the Lima beans to cook very quickly. Much faster than red beans or pintos.

I keep these in the freezer for a sweet snack. Earth Balls
1 c. peanut butter 1/3 c. honey 1/2 c. raisins 3/4 c. coconut 1/2 c. chocolate chips 1/4 c. sunflower seeds 1/4 c. walnuts (chopped) 2 TBS. cocoa powder
Mix together. Roll into balls. Freeze. Makes 1 1/2 doz.

Cut up carrots, celery and grape or cherry tomatoes with creamy salad dressing for dip. Popcorn with butter and parmesan cheese.
