We ended up buying one! Actually I didn't get the instant pot, but another brand that is pretty much the same thing. It's a newer company, so the price is cheaper, and it comes with more attachments. It had good reviews so I went with it. I'm hoping it'll be here by Friday. The first thing I am going to try with it is canning chicken stock.
One downside to this one is that it comes with just a tiny recipe book.

The instruction book gives instructions for it, and there is a setting for it on the appliance, but all of the trusted safe canning sources I've looked at say not to do it. Why on earth would they include it as an option on it if it isn't safe?! Grrrr, that's a large part of the reason I got this contraption. Oh well. We love cheesecake so I'll make that first. I even have all of the ingredients bought already.

I'm seriously considering getting a pressure canner, come be my neighbor and you can borrow it. I have one, but I don't like lugging it out and going through the whole ordeal just for a few jars. We can still be neighbors though. If you are in the market, I might reccomend the All American. They're nice. I am very pleased with mine.

I tried something totally new with my Instant Pot last week. I made a banana bread. That was my first time making anything like that in my IP. It turned out very dense and moist, almost a steamed pudding texture (which is not too surprising when you think about it.)
I happen to like that texture a lot but I think most of my family members found it more heavy than they would prefer.

But I am happy to report that I got the real deal for Christmas! I'm officially an IP owner. I dont know what I'll try first. Probably rice.

I like how it does rice. That would make a good thing to start on.
I was making steel cut oats with my IP for a while and I liked how it tasted very much, but I was reading about how much healthier to soak them overnight first. This method requires a very short cooking time and does not seem to make sense for the IP.
Does anyone know anything about combining overnight soaking with IP cooking? I am wondering if I should just try experimenting to see what happens.
