Oh stop!! I'm hungry and all I want now for Mother's Day is some cheesecake! Just kidding, love the pics of what you are doing. Looks wonderful! Cheesecake is my favorite dessert.

I'm almost sold on the instant pot. I've heard of it before, and it sounds almost too good to be true . Being a cook, I also feel like it is kind of cheating. I love to cook, though. . So much so, that I'll convert crockpot recipes to stove top. I only crockpot if I have to, which is about once a week, since we joined a weekly co-op group for school.

My oldest daughter just learned how to make a homemade cheesecake. It's so good! It's just the recipe from the cream cheese box, but she does a really good job. Last time, she made it in a 9x13 dish, and made bars out of them.

You do have to wait for it to come to pressure and for some things to depressurize. Some people complain about that. But, let's say I'm making 3 cups of plain basmati rice. On the stove, I have to wait for my water to come to a boil and then add the rice, bring it up to a boil, then turn it down, and then watch it to make sure it isn't overcooked or undercooked. In the IP, I add 1.25 cups water for each cup of basmati rice, give it a little stir, shut the lid and hit the rice button. It beeps when it is done and I can let it rest or vent it to use right away. The rice is really good and perfectly cooked. I can do whatever else in the meantime and it doesn't take up any room on the stove.

I do have a rice cooker, because I make so much rice....but, I'm guessing Mr. IP really cuts the cooking time? I could see it being useful for certain things, for sure. I'm just not sure if I can change my ways enough to make it worth the cost

Could somebody please recommend a vegetable broth recipe that I can make in my IP? It depends on what you have and the amounts... I keep a scrap bag in my freezer so I just dump that in with whatever else. I use a leek, what amounts to a medium onion, a couple cloves of garlic, mushroom stems, a small to medium potato diced, carrots, celery (the flimsy middle part is preferable), canned tomato product (1 or 2 cans depending), a carrot or two. I cover it with water to the fill line and do 30 minutes high pressure and quick release. I strain and discard the veg. Season when you are done or use as you like. You can really use what you have on hand: parsley stems, shallot, green onion, parsnip, etc. I find that kale and leafy greens make it bitter. You can also put in a Parmesan rind and some balsamic vinegar, if you like. I do but it depends on what I'm making. If I am making a soup with herbs I would include it but if I'm using the stock for something not herbal like pinto beans or risotto, then I would not include them. I have to admit, it is so impressive, I make it all of the time.

I makes a full flavoured broth that tastes like it simmered all day, but only takes two hours. I keep "saying" I'm going to do that! I like to make a dozen hard-boiled eggs in mine...

I keep "saying" I'm going to do that! I like to make a dozen hard-boiled eggs in mine... Mine sat on the shelf for a year. I wish I would have tried it sooner. My husband loves hard-boiled eggs, even he uses it to make them all the time. We both like the money it has saved us, especially with regards to beans. I never bothered to make them from dry because it always took too long.

I have the free app for my iPad it's called pic collage. The liquid is vanilla extract but it isn't red, it's just the light in my kitchen. Its done mellowing and tastes right. I'm going to make a lot more. Babies always scream when you want to do stuff! The good news is that kids are great sous chefs later on and they can do all of the jobs that you don't care to do. You can do new or more difficult things later in life.
