Any other Instant Pot users here?
I am admittedly not one of those people who uses it for everything but I love mine.

I love my crockpot. I'm undecided about buying an Instapot.

I also think the vegetable broth turns out wonderfully and it is so handy for Fridays and Lent.

I love my crockpot. I'm undecided about buying an Instapot. There is a learning curve and my advice would be to wait until around Black Friday for a good sale. I make a lot of rice, coconut-spice for Asian food; Spanish rice, plain rice and I recently made sushi rice for a class I was teaching. I also make stock and soups, tough meats that require long cooking, and recently I've been making pinto beans. Actually, last night I cooked 12 bone-in thighs, took them out and shredded them, made rice in the same pot, and made beans in my other pot. That's an all-day cook on the stove but I did this one in under two hours and it has lots of ingredients and many steps. While everything was cooking I made pico de gallo. I've also made cheesecake, which I initially scoffed at, but it's actually excellent.

Never heard of an Instant Pot until now. Sounds interesting. They are a really great gadget. If you've felt that pressure cooking was difficult or dangerous, they make it much more approachable with a safe, easy to use product. I got a good deal on mine and then I was intimidated and let it sit on the shelf for a year. After I began to learn how to use it, I started using it at least once a week. I'm an appliance person though, I love to do things myself at home and having the right tools makes it easy. I'm very happy about pinto beans, I have never had much success on the stove top and now I can make charros (flavored pinto beans) like a pro. I calculated that canned beans cost 3-4 times as much as dry beans.

Was going to buy a new crock pot, but now that I know about the Instant Pot, may buy one of those instead. Crockpots are good if you are going to be out of the house all day and want something hot the minute you walk through the door. However, if you are one for doing CP recipies right, sautéing aromatics, searing meat, deglazing, adding things at the right time, etc. it's still just as much work as any other method. The IP has a sautee function which I use for my aromatic veggies and maybe a smaller piece of meat, but for a good sear I still use the cast iron no matter what I'm using to cook. Some people dont like that the IP takes time to come to pressure and some recipies, like meat, are better if you let it depressurize naturally instead of using the quick release function. I also like that if I forget to take out meat or plan ahead, I can cook from frozen in the IP and that I can cook something that takes all day in about an hour without having to babysit it.

My mother has one of these and really likes it. I want one, but haven't purchased one because I don't want to spend the money. I imagine it'll be like most other things that I want that cost too much for comfort. I'll want one for years, always waiting for some hot deal, and then bam, 60% off and I've got my gadget. I wanted a vitamix for years and finally got one on a good deal. I use it 2 or 3 times a day!
I do quite a bit of canning, so I know I'd use it. It's annoying to lug that big pressure canner out for a few jars. I've recently switched to using dry beans as opposed to canned beans as well. It's more affordable and better for your health. The problem is, when I menu plan for the week and one meal has beans in it, I often forget to soak them and then I'm up the creek and headed to the store. It will be nice for that! Same with forgetting to thaw out meat.

I'm the same way with gadgets. I make dried beans in my crockpot and then freeze them. I get all the benefits of the dried beans and the convenience of the canned beans.

I am not, but looking into this instant pot it looks as though it is something worth buying. I am going to read up on it more and watch some youtubes.
